Ramesh Dahal’s story begins in the remote mountain regions of Nepal, near the base camp of Mount Everest. Growing up in a farming family, Dahal faced significant challenges, including a lack of basic amenities like electricity and running water. Despite these hardships, he found solace in cooking, which he began at the tender age of 15. “I started in the kitchen doing everything from dishwashing to chopping,” he recalls. This early exposure ignited a passion for food that would shape his future.

A Leap of Faith: Moving to the U.S.

In 2010, after years of struggle and perseverance, Dahal made the life-changing decision to move to the United States. His journey took him from the bustling streets of Kathmandu to the vibrant food scene in North Carolina. “When I came to the U.S., I had to start from scratch,” he explains. “But I was determined to make my mark in the culinary world.” After a series of jobs in various kitchens, Dahal eventually opened his own restaurant in downtown Raleigh, followed by another in Garner.

Today, Dahal operates a small restaurant located within a gas station in Pittsboro, where he serves a variety of Indian and Nepali dishes. This unconventional setting has become a beloved spot for those seeking authentic flavors. “People are surprised when they find out we’re serving gourmet food in a gas station,” Dahal says with a smile. “But it’s all about the food and the experience.”

Signature Dishes and Customer Favorites

Among Dahal’s offerings are traditional dishes such as samosas, chicken curry, and a unique Nepali mashed potato delicacy served with chicken curry. The samosas, made with a flaky pastry filled with spiced chickpeas and potatoes, have become a local favorite. Dahal emphasizes the importance of quality ingredients, stating, “I want my food to reflect my love for cooking. If I wouldn’t eat it myself, I won’t serve it.”

In addition to his gas station restaurant, Dahal has opened several other establishments, including “Mama’s Master,” where he teaches the art of dumpling making, and “Himalayan Fried Chicken and Bar.” He is also in the process of launching a food truck named “Trishel,” which will offer a diverse menu inspired by his travels. “I want to bring different flavors to the community,” he explains. “Food is a way to connect with people.”

A Vision for the Future

Dahal’s ambitions extend beyond his current ventures. He envisions a future where he can further enrich the local food landscape by introducing more diverse cuisines and culinary experiences. “I want to create a space where people can come together to enjoy good food and learn about different cultures,” he shares. This vision is evident in his plans for the food truck and potential collaborations with other local chefs.

In addition to his culinary pursuits, Dahal is also passionate about health and wellness. He emphasizes the importance of using fresh, wholesome ingredients in his cooking and is committed to offering gluten-free options to accommodate various dietary needs. “Food should not only be delicious but also nourishing,” he asserts. “I want my customers to feel good about what they eat.”
